Overview
Mutton is an excellent food for cooling the body’s heat. Mutton is very tender and soft, so people of any age can eat it. Eating mutton helps to reduce the body’s heat and strengthens the skin and gives a glow to the complexion. Because mutton fry includes ginger and garlic, it provides even more strength to the body.
Ingredients
Meat – 250 grams
Turmeric powder – 1/2 teaspoon
Ginger – small piece
Garlic cloves – 8
Pepper – 1 teaspoon
Cumin seeds – 1/2 teaspoon
Fennel seeds – 1 teaspoon
Cinnamon – 2 small pieces
Cloves – 4
Coconut – 1/4 piece
Onion – 2 (medium size)
Tomato – 2 (medium size)
Chilli powder – 2 teaspoons
Pepper powder – 1 teaspoon
Oil – 1 tablespoon
Salt – as required
Curry leaves – as required
Coriander leaves – as required
Cooking Method
- Wash the meat well in water and then squeeze out the water and set aside in a vessel.
- Grate the coconut and set it aside.
- Finely chop the onions, tomatoes, curry leaves, and coriander leaves. Divide the chopped onions and tomatoes into two portions – one for boil and one for Saute.
- In a mixer, grind pepper, cumin seeds, ginger, garlic, and water to a fine paste. Keep the paste aside in a vessel.
- In a pressure cooker, add the cleaned meat and turmeric powder. Include the grinded masala, the chopped onions, and tomatoes. Add curry leaves, coriander leaves, salt, and pour the water till cover the meat. Close the lid and place it on the stove. Turn off the stove after 4 or 5 whistles and set it aside.
- In a mixer, grind the grated coconut and fennel seeds to a fine paste. Keep the paste aside in a vessel.
- Place a pan on the stove and add oil. Once the oil is hot, add fennel seeds, cinnamon, and cloves for tempering.
- After tempering, add the chopped onions and tomatoes kept for sauteing and fry well. Add the required amount of salt and fry well. This helps the tomatoes cook faster.
- Once the onions and tomatoes are well sauteed into a nice paste, add the meat. Pour the water used for cooking the meat from the pressure cooker into the pan. Stir everything well.
- Add the meat pieces to the pan first. Then slowly add the water used for cooking the meat. Stir continuously as you add the water little by little.
- Once it comes to a good boil, add the grinded coconut paste and stir well.
- When the water reduces and the mixture becomes thick, add a little more oil and fry well. This enhances the taste. Those who prefer more spice can add the required amount of pepper powder. Turn off the stove and stir a couple of times before setting aside. The delicious mutton fry is ready to savor.
